Mung Bean Fritters

This is what I ate for lunch today.  I had a big container of mung beans and rice already cooked and ready in the fridge.  I spooned out 4 dollops of the mixture into a pan and fried these fritters on medium heat until they were brown.  I served them with salt, a splash of lime juice, heirloom tomato slices, goat cheese and pumpkin seeds.  It was so good! - felt like comfort food.
